Sweet Potato Steaks with Celery Caesar






Meatless Mondays just got a whole lot sweeter with this recipe. As someone who tries to follow a plant-based diet as much as possible, I'm always on lookout for fun recipe ideas to make meatless meals interesting. You'll notice this recipe calls for anchovy paste for my dressing - I ALWAYS have this in my house as I find it's great in a lot of dishes like puttanesca sauce. Sounds gross, I know, but it adds so much flavour and I promise it will become a staple in your house as well if you just get over the fear! Also, if you want to cut some corners (we've all been there) feel free to use a pre-made spice blend for the sweet potato steaks like Montreal steak spice or Cajun seasoning. No matter what spin you put on it, this dish is going to become a favourite.


INGREDIENTS:


SWEET POTATO STEAKS:

  • 2 medium-large sweet potatoes, cut in half lengthwise

  • ½ tsp salt

  • ½ tsp ground coriander

  • ¼ tsp ground cumin

  • ¼ tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1/8 tsp cayenne (or more if you like it spicy)

  • 1 tsp coconut sugar or brown sugar

  • Olive oil drizzle to coat sweet potatoes with

CELERY CAESAR SALAD:

Dressing:

  • 1 garlic clove, minced

  • 1 tbsp Dijon mustard

  • 1 dash of Worcestershire sauce

  • 1/4 tsp anchovy paste

  • 1 ½ tbsp light olive oil

  • Pepper to taste

Salad:

  • 4 celery stalks or 6 celery hearts, thinly sliced (makes about 2 cups)

  • Shaved parmesan (no judgment on how much you want to put…)



DIRECTIONS:


FOR THE SWEET POTATO STEAKS:

  1. Preheat oven to 400 degrees Fahrenheit. Line baking sheet with tin foil and spray with cooking spray.

  2. Score each sweet potato half diagonally through the flesh without going through the skin. Cut diagonally in the other direction to make a diamond shape.

  3. Drizzle some olive oil on the potatoes and rub it on the skin and flesh.

  4. Place sweet potato halves face down on the baking sheet and bake for 15-20 minutes then flip them and lightly drizzle a small amount of olive oil.

  5. Sprinkle 1 tsp of the spice rub on top of the flesh side of the sweet potato and rub in using the back of the tsp.

  6. Place sweet potatoes back into the oven flesh side up and abke for another 25-30 minutes or until a knife inserted into the sweet potatoes gives no resistance.

  7. If desired, broil on high for 1-2 minutes to get a deeper caramelization on top.


FOR THE SALAD:

  1. While the sweet potatoes are baking, prepare the dressing by combining all the dressing ingredients in a small bowl and mixing together.

  2. In a medium bowl, add sliced celery and dressing and combine until celery is coated.

  3. Add shaved parmesan (as much as you want) and incorporate into salad. Crack fresh pepper over top, if desired.


TO ASSEMBLE THE DISH:

  1. Portion sweet potato halves onto plates and serve celery Caesar alongside. Enjoy!
