Soft n' Chewy Apple Pie Granola Bars
Happy Pi(e) Day, everyone (March 14th = 3.14 = π, if you didn't catch on)! And Happy Dietitian Day! In honour of BOTH holidays, I've decided to put a healthy twist on a classic dessert: apple pie...in breakfast form. These granola bars have all the flavours you'll find in your average apple pie but cut the calories in half and are an easy make-ahead breakfast, snack, or dessert idea if you're looking to give into that sweet tooth without going overboard. Who said we can't celebrate two holidays at once? In moderation, of course!
1 1/2 cups oats
2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 tsp. vanilla extract
3 tbsp. maple syrup (or honey)
1 tbsp. almond butter (or any nut butter)
1/3 cup unsweetened applesauce
1/4 cup chopped pecans (or any nuts/seeds)
2 tbsp. ground chia seeds (optional)
Preheat oven to 350°F. Lightly grease an 8x8 inch baking pan.
In a medium bowl, combine all ingredients and mix until well combined.
Transfer mixture into pan and pat down hard until evenly spread out.
Bake for 12-15 minutes or until soft. Remove from oven and let cool.
Once cool, cut into 8 even bars and enjoy!
