Fenn-elery Slaw


What do you get when you mix fennel and celery together? A fenn-elery slaw of course! These two vegetables lend themselves so well to a crunchy salad that you can use to top a burger or as a side dish. Not only that, but fennel is in season right and is a great alternative to using onion if you have a sensitivity to it. Fennel is known for its black licorice flavour which usually has people running for the hills but this once-hated flavour combined with the bitter crispness of celery and a light vinegar-based dressing turned out to be downright delicious! Not sold yet? Fennel packs a serious nutritional punch since it's high in fiber which helps with digestion and heart health as well as tons of vitamins and minerals like vitamin C and potassium. If you want to get creative, you can take it one step further by adding things like pomegranate seeds, chopped nuts, parmesan cheese, and herbs to make it your own!



INGREDIENTS:


FOR THE SLAW:

  • 1/2 bulb of fennel, stems and core removed, thinly sliced

  • 2 celery stalks, thinly sliced (on an angle if you want to get fancy)

  • 1/2 green onion, thinly sliced


FOR THE DRESSING:

  • 3 tbsp. white wine vinegar (or white vinegar)

  • 1 tsp. lemon zest (~1/2 lemon)

  • 1 tsp. avocado oil

  • Salt & pepper to taste


DIRECTIONS:

  1. In a small-medium bowl or tupperware, combine all the salad ingredients. Set aside.

  2. In a small bowl, combine all the ingredients for the dressing and whisk together.

  3. Add the dressing to the slaw and mix until well combined.

  4. Cover bowl or tupperware with cover or plastic wrap and put it in the fridge to let it marinate at least an hour.

  5. Serve on top of burger or as a side dish!
