Coco-Lemon Energy Bites

These little guys pack a serious flavour punch in one bite. Tangy, sweet, and refreshing are just some of the words that come to mind...ocean waves, palm trees, and pina coladas work too!




INGREDIENTS:

  • 1 cup oatmeal

  • 1/3 cup almonds 

  • 1/4 tsp. turmeric (optional)

  • 3-4 tbsp. maple syrup

  • 1/3 cup unsweetened coconut flakes

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 3 tsp. coconut oil, melted 

  • 1 tsp. vanilla extract

  • 2 tsp water


DIRECTIONS:

  1. Put the oatmeal and almonds in a food processor and blend until a powder is formed.

  2. Add the remaining ingredients and blend until a "dough" forms. If it's too dry, add some water to moisten a bit. 

  3. Scoop out 1 tbsp of dough and form into balls between your hands. You should be able to make around 12. Store in the fridge to set (and to avoid eating them all in one sitting). Enjoy!
