Chunky-ish Monkey Granola




I'm a HUGE ice cream fan even in the dead of winter and Ben & Jerry's is definitely a staple in my house. But when I don't feel like polishing off a pint by myself, I try to satisfy my craving with a healthier version of the same flavour profile. I usually try to make my own granola at home since it's the type of thing that can be constantly changed with the ingredients you add to it. Not to mention it's packed with fibre and protein to keep you full longer. I decided on this flavour combo simply to step a little outside of the box which ended up paying off because it's now my favourite way to make granola!


INGREDIENTS:

  • 2 cups oatmeal

  • 2 tsp ground chia seeds (optional)

  • 1/2 cup pecans or walnuts, roughly chopped 

  • 1/2 tsp cinnamon 

  • 1/2 tsp vanilla extract

  • 1/3 cup honey or maple syrup

  • 2-3 tbsp oil (coconut or avocado)

  • 1/2 cup dried banana chips, roughly chopped 

  • 1/2 cup dark chocolate, roughly chopped into chunks or dark chocolate chips 


DIRECTIONS:

  1. Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper and set aside.

  2. Mix all dry ingredients in a large bowl. Add the wet ingredients except the chocolate chunks and coat the mixture well. It should be a sticky consistency. 

  3. Pour mixture onto the baking sheet and spread out into an even layer. Place in the oven on the middle rack and bake for 20 minutes. Check the granola halfway and give it a little mix to avoid burning.

  4. Remove from the oven and let cool. Once cooled, add the chocolate chips/chunks and mix together.

  5. Top your Greek yogurt or fruit bowl with this yummy granola and enjoy!


NUMBER OF SERVINGS: 10 servings (1/4 cup per serving)
