Choco-cherry Frozen Yogurt Bark



V-day is upon us and, along with it, a plethora of chocolate in all its glory. This recipe is super easy to make and versatile to the max. I made mine with frozen cherries because that's what I had available but feel free to try with any type of berry like raspberries, blueberries, and strawberries, oh my! You can eat this as a snack, breakfast (yes, frozen yogurt for breakfast), or dessert. Plus, you'll need some fun ideas for all that unconsumed chocolate on February 15th.


INGREDIENTS:

  • 1 cup frozen cherries (or any fresh or frozen berry), roughly chopped (plus a little more for garnish)

  • 2 ounces of dark chocolate, chopped into small chunks (plus a little more for garnish)

  • 1 cup 5% fat plain Greek yogurt (I used high fat to get a creamier end result but feel free to use 0% or 2%)

  • 2 tsp. vanilla extract

  • 1/4 cup maple syrup or honey


DIRECTIONS:

  1. In a bowl, mix together all the ingredients until well combined.

  2. Line a shallow metal 8x8 square cake pan with parchment paper so that it covers the bottom and sides completely.

  3. Pour mixture into cake pan and spread evenly. Garnish with chopped fruit and chocolate and place in freezer for at least 2 hours or until fully set.

  4. Once frozen, remove from the pan from the freezer and pull ends of parchment paper to remove the bark from the pan.

  5. Cut into squares or break into chunks and enjoy!
