Cashew-Crusted Salmon

This recipe was the very first I put on Instagram and remains a constant in my life. You really can't go wrong with Dijon mustard, nuts, and garlic. The flavour combination hits all the right notes that you almost forget the omega-3 fatty acid packed salmon lies just below it ready to be devoured. It just had to be on the site and I guarantee it's a recipe you'll keep coming back to.


  • 2 filets Salmon, skin on

  • 1 clove garlic, minced

  • 2-3 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 tbsp oil, olive or avocado (plus a little extra to line parchment paper).

  • Salt and pepper to taste

  • ½ cup cashews, finely chopped


  1. Preheat oven to 375 °F. Line a baking sheet with parchment paper. Very lightly drizzle some oil on parchment paper and place the salmon filets on top.

  2. In a small bowl, combine garlic, Dijon mustard, honey, and oil. Mix all ingredients together and add in the salt and pepper to taste.

  3. Coat the salmon filets with the sauce mixture and add the chopped cashews on top until fish is well covered.

  4. Bake in oven for 10-13 minutes or until fish is cooked all the way through. If the cashews are browning too quickly, cover fish with tin foil to prevent the cashews from burning while still cooking the fish.

  5. Serve with your favourite side dish and enjoy!
